I have never considered myself a fan of Rhubarb until a friend made me a custard pie with it last year. I have always said I didn't like it, but I don't even remember trying it before. I think its the appearance of the vegetable that started my lack of love for Rhubarb. It looks stringy and tough like the outer stalks of celery. Who wants that in a dessert? ME!
This year I have become a little obsessed with it. When cooked with a little sugar and lemon juice it is the perfect mix of tart and sweet. This week I made ice cream with it. Delicious!
